“Bausi”
Extravergin olive Oil
Fragrant on the nose, with inviting hints of fresh olive, the Bausi Taggiasca variety is enriched with imperceptible floral and white fruit notes.
In the mouth it is fine, elegant, you can feel a caressing and sweet paste supported by a good combination of bitter-piccant and a pleasant aroma of apple and pine nuts.

Taggiasche Olives
in Brine
Our Taggiasche olives in brine, are a careful selection of the fruit during all phases of the harvest.
Considered the most delicate in the world and consequently also the most valuable, they are used in many Ligurian dishes based on both meat and fish, in bread and focaccia doughs, in the preparation of pizzas and in various salads.
They can be enjoyed alone as an aperitif accompanying a glass of Vermentino wine or Pigato Saglietto wine.

Vineyards
Quality starts with a love of the vineyard.
The love for the vineyards, the composition of the soil, the position of the vineyards on steep slopes exposed to the sun, the short pruning, the thinning out of the bunches: all this allows us to obtain grapes of the highest quality. The planting density is rather high (7000 vines per hectare), so the vines have a low yield.
Grapes: Vermentino and Pigato
Soil: shallow, chalky clay loam; alkaline, rich in calcium.
Produces a refined, aromatic fruit.
Aspect: sud – east
Position: terraced hillside strips, average incline of 35%
Planting/training: guyot
Planting density: 7,000 plants per hectare
Year of planting: 2005
