Extra Virgin Olive Oil "Saglietto"

 

The "Saglietto" oil is yellow in colour with a fine and intense aroma, some artichoke fragrance and a scent of aromatic herbs like mint and rosemary. Its taste is elegant and soft with a fruity flavour of apples, pine nuts and almonds that varies from sweet to slightly spicy or bitter.

It is an ideal condiment for seafood, mixed salades, marinaded sea bass, mashed vegetables, crustaceans, fresh cheese and yeast-risen pastry.

 

With the same attention paid to the quality of their extra-virgin olive oil "Saglietto" prepare two bottled olive products:

- Taggiasca olives (grown only in Liguria) pickled in brine (salt solution) and

- Olive paste of Taggiasca olivesCHIUDI

"Saglietto" Wines

 

Their vineyards lie under a bright sky with a constant sea breeze and the scent of wild herbs. Because of an accurate trim and selective thinning of the vines they grow few but healthy grapes.

 

Vermentino

This is certainly the most important grape variety of Liguria. The "Saglietto" Vermentino is a wine with a golden colour, limpid lucent. Slightly fruity it has a delicate scent of peaches and aromatic herbs such as rosmary.

It should be served at 11/12 C degrees.

 

Pigato

It is gold pale in colour with a greenish toning. The gentle scent is intense of minerals, peaches, wild flowers and gorse, a mixture of aromatic herbs like thyme and rosmary. It should be served at 11/12 C degrees.

Vermentino and Pigato are in fact a variety of Malvasia.CHIUDI

Taggiasca Olives "Saglietto" in Brine

 

The small and sweet Taggiasca olives ‘Saglietto’ have a delicate flavour. When the olives begin to darken it is time to harvest them: the specific colour is a sign of their ripeness and a guarantee of their sweetness and consistency.

The traditional preparation of this Ligurian delicacy takes much time because of the six months’ pickling in brine of the olives. A slight pasteurization renders any kind of conservant unnecessary.

The Taggiasca olives "Saglietto" are used as an appetizer or as a flavouring and ingredient in preparations such as salades, sauces, fish and meat.

Olive Paste of Taggiasca Olives "Saglietto"

 

The Taggiasca olives are picked when fully ripe, then stoned and grinded in a mill. Some extra-virgin olive oil ‘Saglietto’ is added to the mash in order to get the delicious olive paste. A spoonful of this paste is a perfect compliment to tomato sauce, risotto or bread.CHIUDI
